INGREDIENTS:

2 tablespoons Aroma olive oil

4 halibut fillets (6 oz each)

Sea salt and cracked black pepper

4 tablespoons butter
-
3 cloves garlic, thinly sliced

2 tablespoons capers, rinsed

Zest of 1 lemon

2 tablespoons fresh lemon juice
-
Fresh parsley, chopped

Fleur de sel for finishing
INSTRUCTIONS:

Pat halibut dry and season generously with salt and pepper on both sides.

Heat Aroma olive oil in a large skillet over medium-high heat until shimmering.

Place halibut skin-side up in the pan and sear for 4-5 minutes until golden. Flip and sear another 2-3 minutes until cooked through. Transfer to a warm plate.

Reduce heat to medium. Add butter and garlic to the pan, stirring constantly until butter turns golden and smells nutty (about 2 minutes).

Add capers and stir for 30 seconds. Remove from heat and add lemon zest and juice.

Spoon brown butter sauce over halibut. Garnish with parsley
