Pan-Seared Halibut with Lemon Brown Butter & Crispy Capers

INGREDIENTS:


  • 2 tablespoons Aroma olive oil

  • 4 halibut fillets (6 oz each)

  • Sea salt and cracked black pepper

  • 4 tablespoons butter

  • 3 cloves garlic, thinly sliced

  • 2 tablespoons capers, rinsed

  • Zest of 1 lemon

  • 2 tablespoons fresh lemon juice

  • Fresh parsley, chopped

  • Fleur de sel for finishing


INSTRUCTIONS:


  1. Pat halibut dry and season generously with salt and pepper on both sides.

  2. Heat Aroma olive oil in a large skillet over medium-high heat until shimmering.

  3. Place halibut skin-side up in the pan and sear for 4-5 minutes until golden. Flip and sear another 2-3 minutes until cooked through. Transfer to a warm plate.

  4. Reduce heat to medium. Add butter and garlic to the pan, stirring constantly until butter turns golden and smells nutty (about 2 minutes).

  5. Add capers and stir for 30 seconds. Remove from heat and add lemon zest and juice.

  6. Spoon brown butter sauce over halibut. Garnish with parsley
